🍋 Silky, creamy, and effortlessly elegant, Lemon Posset is a classic dessert made with just a handful of simple ingredients. Best of all, it can be prepared a day in advance, making it an ideal dessert for brunches, garden lunches, Derby Day celebrations, or any special gathering.
Serves: 4–6

Ingredients
- 2 cups heavy cream
- ⅔ cup granulated sugar
- Zest of 2 lemons
- ⅓ cup freshly squeezed lemon juice (about 2–3 lemons)
- Pinch of fine sea salt

For Garnish
- Fresh raspberries and blueberries
- Lemon zest
- Edible flowers
- Optional: Salted Rosemary Shortbread cookies or Rose Pistachio Cardamom Cookies, for serving
Instructions
- In a medium saucepan, combine the heavy cream, sugar, lemon zest, and a pinch of sea salt.
- Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar has completely dissolved. Do not boil.
- Remove the saucepan from the heat and stir in the fresh lemon juice.
- Let the mixture rest for about 10 minutes, then strain through a fine-mesh sieve into a measuring cup or bowl.
- Divide evenly among serving glasses, ramekins, or vintage dessert coupes.
- Refrigerate for at least 4 hours, or preferably overnight, until fully set.
- Just before serving, garnish each Lemon Posset with fresh berries, a sprinkle of lemon zest, and a few edible flowers for an elegant seasonal finish.
