Grilled Dijon-Garlic Zucchini
Simple, flavorful, and perfect for summer entertaining, this grilled zucchini is lightly brushed with a Dijon-garlic marinade and finished with fresh lemon zest. A touch of red pepper flakes adds gentle warmth while allowing the fresh flavor of the zucchini to shine.

Ingredients
- 3 medium zucchini
- 3 tablespoons extra virgin olive oil (we recommend Chili Infused EVOO)
- 1 tablespoon Dijon mustard
- 2 cloves garlic, finely minced
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon red pepper flakes (if using Chili Infused EVOO - use to your taste)
- Flaky sea salt, for finishing
- Zest of 1 lemon
Directions
Prepare the Zucchini
Slice the zucchini lengthwise into planks approximately ¼-inch thick.
Prepare the Marinade
In a small bowl, whisk together the olive oil, Dijon mustard, garlic, sea salt, black pepper, and red pepper flakes until well combined.
Grill the Zucchini
Preheat a grill to medium-high heat.
Lightly brush both sides of the zucchini with the Dijon-garlic mixture.
Place the zucchini on the grill and cook for 2–3 minutes per side, until tender and lightly charred.
Avoid overcooking, as the zucchini should retain a slight bite.
Finish & Serve
Arrange the grilled zucchini on a serving platter.
Sprinkle lightly with flaky sea salt and finish with fresh lemon zest.
Serve warm alongside grilled seafood, sandwiches, or seasonal salads.
