Watermelon, Haricots Verts & Feta Salad with Champagne Vinaigrette
Sweet watermelon, crisp haricots verts, creamy feta, and fresh mint come together in a refreshing summer salad that is both elegant and effortless. Finished with a light Champagne Vinaigrette, this colorful side dish pairs beautifully with grilled seafood and summer gatherings.

Ingredients
For the Salad
- 4 cups watermelon, cubed
- 12 ounces haricots verts, cleaned and trimmed
- ½ cup crumbled feta cheese
- 2 tablespoons fresh mint, thinly sliced
- Freshly ground black pepper
For the Champagne Vinaigrette

- ¼ cup Champagne vinegar
- ½ cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Directions
Prepare the Haricots Verts
Bring a pot of salted water to a boil.
Add the haricots verts and cook for 2–3 minutes, until bright green and crisp-tender.
Transfer immediately to an ice bath to stop the cooking process.
Drain well and pat dry.
Prepare the Champagne Vinaigrette
In a small bowl or jar, whisk together the Champagne vinegar, olive oil, Dijon mustard, honey, sea salt, and black pepper until smooth and emulsified.
Set aside until ready to serve.
Assemble the Salad

- Arrange the watermelon and haricots verts in a shallow serving bowl or on a serving platter.
- Scatter with crumbled feta and fresh mint.
- Just before serving, drizzle lightly with the Champagne Vinaigrette and finish with freshly cracked black pepper.
- Serve chilled.
